In 1995 he began a journey that would take him through Canada’s top kitchens including Avalon and Eigensinn Farm. He has travelled extensively throughout North America tasting a wide range of regional and ethnic food. 

In 2001 his passion for cooking took him to Japan where he spent time in the kitchens of Ueno, Osaka.   Along the way a culinary philosophy developed that would ultimately find its expression in the valleys of Nosé.
